INGREDIENTS:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1 egg
- 1/4 cup whole milk
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 5-6 medium-sized apples, peeled and sliced
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- Powdered sugar for dusting (optional)
INSTRUCTIONS:
- Preheat the oven to 375°F (190°C) and butter a 9-inch (23cm) springform pan.
- In a large bowl, combine the flour, 1/2 cup sugar, baking powder, and salt.
- Add the cubed butter and use a pastry cutter or your hands to mix the butter into the dry ingredients until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the egg, milk, lemon juice, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until the dough forms.
- Divide the dough in half and press one half into the bottom of the prepared pan.
- In a separate bowl, mix the sliced apples, 2 tablespoons of sugar, and cinnamon.
- Spread the apple mixture over the dough in the pan.
- Crumble the remaining dough over the top of the apple mixture.
- Bake for 45-50 minutes, or until the top is golden brown and the apples are tender.
- Allow the cake to cool for a few minutes before removing it from the pan and transferring it to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
