Recipe for Greek Souvlaki
Ingredients
Salt and pepper to taste
Wooden skewers, soaked in water for 30 minutes
Tzatziki sauce (optional, for serving)
Pita bread or rice (for serving)

Prepare Marinade:
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well to combine

Prepare Chicken:
Cut the chicken breasts into 1-inch cubes and place them in a large resealable plastic bag or shallow dish.
Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for the best flavor.

Skewer the Chicken:
Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece. Discard any excess marinade -
Grill the Souvlaki:
Grease the grill grates lightly with oil to prevent sticking.
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Cooking time may vary based on the thickness of the chicken pieces.

Serve:
Remove the skewers from the grill and let them rest for a few minutes.
Serve the Greek Souvlaki hot, either by sliding the chicken off the skewers onto a plate or serving them directly on the skewers.
Optionally, serve with tzatziki sauce on the side for dipping and with pita bread or rice to complete the meal.
